Makes enough for 10 servings

Ingredients for the Citrus Syrup (makes 750ml)

300ml newly squeezed clementine juice
200ml recently pressed lemon juice
500g granulated sugar

To make the Premix (makes 850ml, serving 10)

400ml decent vodka
100ml London dry gin
150ml peach schnapps
200ml clementine syrup (from the recipe above)
Whole cranberries, for garnish
Mandarin essential oil, as a final touch

Directions

For the Citrus Syrup: Put the listed items in a saucepan, bring to a simmer, mixing to dissolve. After that, remove from the heat allowing it to cool completely. Pour into an sterilised bottle, close it and refrigerate it in the fridge, where it will keep for up to a month.

To make Batch Mix: Combine the specified liquid ingredients in a sizeable container, allow it to infuse for an hour, then pass it through preferably using muslin, making it perfectly clear.

When ready to serve: Measure 85ml from the premix into your mixing glass containing ice, and agitate lightly for a minute to cool it down. Strain into a frosted cocktail glass or equivalent, top with the cranberries and finish with a light spray of mandarin oil over the drink.
